- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1/4 cup honey
- 2 tbsp soy sauce
- 1 tbsp olive oil
- 1/2 tsp red pepper flakes (optional, for spice)
- Salt and pepper, to taste
- Fresh parsley (for garnish)
Instructions:
- Prepare the ingredients:
- Peel and devein the shrimp.
- Slice the sausages, bell pepper, zucchini, and onion.
- Mince the garlic.
- Cook the sausage:
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced sausages and cook for 3-4 minutes, or until browned and slightly crispy. Remove from the skillet and set aside. - Cook the shrimp:
In the same skillet, add the shrimp. Cook for about 2 minutes on each side until they turn pink and opaque. Remove them from the skillet and set aside with the sausage. - Sauté the veggies:
In the same skillet, add the sliced bell pepper, zucchini, and onion. Cook for 3-4 minutes until they start to soften. Add the minced garlic and cook for another 1 minute until fragrant. - Make the honey garlic sauce
- Combine and simmer:
Add the cooked sausage and shrimp back into the skillet. Stir everything together and cook for an additional 2-3 minutes until everything is heated through and coated in the sauce. Taste and adjust with salt and pepper. - Serve:
Garnish with fresh parsley and serve over rice, noodles, or enjoy on its own for a low-carb meal!
