  3. Thirty minutes before dinner, work on the rice. Add ghee to the pot, then add the rice to lightly toast for 2-3 minutes. Add the seasonings/bay leaves. Add the broth, bring it to a boil, then simmer covered for about 20 minutes. The rice should be cooked through. Fluff the rice and remove the bay leaves before serving.
